These energy balls are built to taste bright and clean — not like candy. Dates provide gentle sweetness, nut butter adds richness, and matcha brings a vivid green finish. A pinch of salt is the secret: it makes matcha taste smoother and more rounded.

Ingredients & Ratio

This base rolls easily and stays clean. If the mix feels sticky, add oats. If it feels dry, add nut butter 1 tsp at a time.

Core

1 cup soft pitted dates (about 10–12)
¾ cup rolled oats
⅓ cup nut butter (almond or cashew)

Cashew butter = the most “clean” flavor with matcha.

Matcha + finish

2–3 tsp ceremonial matcha (to taste)
½ tsp vanilla
Pinch of salt

Start with 2 tsp for mild, 3 tsp for more vivid matcha.

Coating (optional)

Shredded coconut
Crushed pistachio
Sesame seeds
A light dusting of matcha

The ritual steps

Blend, roll, chill. That’s it. The only rule: stop blending as soon as it holds together — over-blending makes it oily.

Soften dates (if needed)
If your dates are dry, soak in warm water for 5 minutes, then drain well.

Blend the mix
In a food processor: pulse oats to a coarse flour. Add dates, nut butter, matcha, vanilla, and salt. Pulse until the mixture clumps and holds when pressed.

Roll
Scoop 1 tbsp portions and roll into balls. If sticky, lightly dampen your hands.

Coat (optional)
Roll in coconut, pistachio, sesame, or a light dusting of matcha.

Chill + store
Chill for 15–30 minutes to set. Store airtight in the fridge for up to 7 days.
Troubleshooting
Too sticky?
Add 1–2 tbsp oats and pulse again. Chill the mixture 10 minutes before rolling.
Too dry / crumbly?
Add nut butter 1 tsp at a time (or a splash of milk) until it holds.
Want more matcha?
Increase to 1 tbsp matcha for a bolder bite (best if your base is not too sweet).
