The secret: make a small, smooth matcha concentrate first, then pour it gently over tonic and ice. This keeps the drink bright, layered, and clean — without foam overflow or clumps.

Ingredients & Ratio

Build with cold tonic and lots of ice. Add matcha gently on top for a clean layered look.

Matcha concentrate

2 g ceremonial matcha (≈ 1 tsp, heaped)
45–60 ml water at 75–80°C

Stronger than usual so it stays vivid in the tonic.

Tonic base

200–260 ml chilled tonic water
Ice (a full glass)

Choose a crisp tonic (not overly sweet).

Lime peel + optional

1 long strip lime peel (zest only)
1 tsp lime juice (optional)
1 tsp honey/agave (optional)

Peel gives aroma; juice adds brightness. You can use both.

How to

The ritual steps

Keep everything cold. Pour matcha last and gently — that’s how you get the clean emerald layer on top.

Make matcha concentrate
Sift matcha into a bowl/cup. Add 45–60 ml water at 75–80°C. Whisk (or froth) until silky and smooth.

Build the tonic
Fill a tall glass with ice. Add chilled tonic water (200–260 ml). Express the lime peel over the glass (pinch/twist to release oils), then drop it in.

Float the matcha
Slowly pour matcha concentrate over the back of a spoon (or gently down the side of the glass) to create a clean top layer.

Sip, then stir
Take a first sip layered. Then stir gently to combine and finish clean. Optional: add 1 tsp lime juice or honey if you want more brightness/sweetness.
Troubleshooting
Foam overflow?
Pour tonic first, then matcha slowly. Use plenty of ice and a taller glass.
Layer disappears?
Make sure tonic is very cold, and pour matcha over a spoon to slow the flow.
Too bitter?
Lower whisking water temp (75°C) and add 1 tsp honey. Bitter often means water was too hot.
